Ginger and Lemongrass Sweet Potato Soup
This delicious soup is a unique combination of sweet potatoes, ginger, and lemongrass for a flavorful and nutritious meal. Ingredients:
- 4 cups vegetable broth
- 2 sweet potatoes, peeled and diced

- 1 tablespoon olive oil
- Salt and pepper to taste
- 1/4 cup fresh parsley, chopped
Directions:
- Heat the olive oil in a large pot over medium heat. Add the onion and cook until softened, about 5 minutes.
- Add the ginger, lemongrass, and garlic and cook for an additional minute.
- Add the sweet potatoes and vegetable broth and bring to a boil.
