Spicy Lentil Soup with Cumin, Coriander, and Love

Ingredients:
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon smoked paprika
- 1/2 teaspoon chili powder
- 1/2 teaspoon sea salt
- 4 cups vegetable broth
- 2 cups dried red lentils, rinsed
- 1 cup diced tomatoes
- 1 cup diced carrots
- 1 cup diced celery
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh cilantro
- 1 tablespoon fresh lemon juice
- 1 teaspoon honey
Directions:
- Heat the olive oil in a large pot over medium heat.
- Add the onion and garlic and sauté until the onion is translucent, about 5 minutes.
- Add the cumin, coriander, smoked paprika, chili powder, and sea salt and stir to combine.
- Add the vegetable broth, lentils, tomatoes, carrots, and celery and bring to a boil.
- Reduce the heat to low and simmer for 20 minutes, stirring occasionally.
- Add the parsley, cilantro, lemon juice, and honey and stir to combine.
- Simmer for an additional 5 minutes, stirring occasionally, until the lentils are cooked through.
- Serve warm.
