Spicy Lentil Soup with Cumin, Coriander, and Love

Ingredients:

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon sea salt
  • 4 cups vegetable broth
  • 2 cups dried red lentils, rinsed
  • 1 cup diced tomatoes
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh cilantro
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon honey

Directions:

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion and garlic and sauté until the onion is translucent, about 5 minutes.
  3. Add the cumin, coriander, smoked paprika, chili powder, and sea salt and stir to combine.
  4. Add the vegetable broth, lentils, tomatoes, carrots, and celery and bring to a boil.
  5. Reduce the heat to low and simmer for 20 minutes, stirring occasionally.
  6. Add the parsley, cilantro, lemon juice, and honey and stir to combine.
  7. Simmer for an additional 5 minutes, stirring occasionally, until the lentils are cooked through.
  8. Serve warm.
