Smoked Paprika Roasted Red Pepper Soup

Ingredients:
- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon smoked paprika
- 1/2 teaspoon sea salt
- 1/4 teaspoon freshly ground black pepper
- 1/4 teaspoon cayenne pepper
- 1 (14.5 ounce) can diced tomatoes, undrained
- 2 cups vegetable broth
- 1 (12 ounce) jar roasted red peppers, drained and chopped
- 1/2 cup heavy cream
- 1/4 cup freshly grated Parmesan cheese
Directions
- Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
- Add the smoked paprika, salt, pepper, and cayenne pepper and cook for 1 minute, stirring constantly.
- Stir in the diced tomatoes and vegetable broth and bring to a boil. Reduce heat to low and simmer for 15 minutes.
