Smoked Paprika Roasted Red Pepper Soup

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced

  • 1/4 teaspoon cayenne pepper
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 2 cups vegetable broth
  • 1 (12 ounce) jar roasted red peppers, drained and chopped
  • 1/2 cup heavy cream
  • 1/4 cup freshly grated Parmesan cheese

Directions

  1. Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
  2. Add the smoked paprika, salt, pepper, and cayenne pepper and cook for 1 minute, stirring constantly.
  3. Stir in the diced tomatoes and vegetable broth and bring to a boil. Reduce heat to low and simmer for 15 minutes.
  4. Add the roasted red peppers and simmer for an additional 5 minutes.
  5. Remove the pot from heat and carefully transfer the soup to a blender. Blend until smooth.
  6. Return the soup to the pot and stir in the heavy cream and Parmesan cheese. Simmer for 5 minutes.
