Creamy Watercress Soup with Crème Fraîche

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 2 bunches watercress, chopped
  • 2 potatoes, diced

  • 1/4 cup crème fraîche
  • Salt and pepper, to taste

Directions:

  1. Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook for 2-3 minutes, stirring occasionally.
