Creamy Watercress Soup with Crème Fraîche

Ingredients:
- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups chicken broth
- 2 bunches watercress, chopped
- 2 potatoes, diced
- 2 tablespoons butter
- 1/4 cup crème fraîche
- Salt and pepper, to taste
Directions:
- Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook for 2-3 minutes, stirring occasionally.
- Add the chicken broth and bring to a boil. Add the watercress, potatoes, and butter and simmer for 10-15 minutes or until the potatoes are tender.
- Remove from heat and let cool slightly. Puree the soup with an immersion blender or in a food processor until smooth.
