Parmesan and Artichoke Soup

This Parmesan and Artichoke Soup is a delicious and easy to make comfort food. It is filled with cheesy goodness and a variety of vegetables. Enjoy a bowl of this savory soup as a starter or side dish.

Ingredients:

  • 3 tablespoons olive oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 3 cups vegetable stock
  • 1 (15 ounce) can diced tomatoes
  • 1 (14 ounce) can artichoke hearts, drained and chopped
  • 2 tablespoons dried parsley
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 cup freshly grated Parmesan cheese

Directions:

  1. Heat the olive oil in a large soup pot over medium heat.
  2. Add the onion and garlic and cook for 3-4 minutes, stirring occasionally, until the onion is softened.
  3. Add the vegetable stock, tomatoes, artichoke hearts, parsley, basil, oregano, sea salt, and black pepper.
  4. Bring to a boil, then reduce the heat to low and simmer for 10 minutes, stirring occasionally.
  5. Remove from the heat and stir in the Parmesan cheese.
  6. Using an immersion blender, blend the soup until it is mostly smooth.
  7. Serve hot and enjoy!
