Parmesan and Artichoke Soup
This Parmesan and Artichoke Soup is a delicious and easy to make comfort food. It is filled with cheesy goodness and a variety of vegetables. Enjoy a bowl of this savory soup as a starter or side dish.
Ingredients:
- 3 tablespoons olive oil
- 1 large onion, diced
- 3 cloves garlic, minced
- 3 cups vegetable stock
- 1 (15 ounce) can diced tomatoes
- 1 (14 ounce) can artichoke hearts, drained and chopped
- 2 tablespoons dried parsley
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1/2 teaspoon sea salt
- 1/4 teaspoon freshly ground black pepper
- 1/4 cup freshly grated Parmesan cheese
Directions:
- Heat the olive oil in a large soup pot over medium heat.
- Add the onion and garlic and cook for 3-4 minutes, stirring occasionally, until the onion is softened.
- Add the vegetable stock, tomatoes, artichoke hearts, parsley, basil, oregano, sea salt, and black pepper.
- Bring to a boil, then reduce the heat to low and simmer for 10 minutes, stirring occasionally.
- Remove from the heat and stir in the Parmesan cheese.
- Using an immersion blender, blend the soup until it is mostly smooth.
- Serve hot and enjoy!
