Miso Soup with Shiitake Mushrooms and Tofu

This delicious vegan soup is a great way to get in your daily nutrients. The combination of miso, shiitake mushrooms, and tofu provide a hearty and robust flavor perfect for any meal.

Ingredients:

  • 4 cups vegetable broth
  • 1/4 cup white miso paste
  • 2 tablespoons sesame oil
  • 2 cloves garlic, minced
  • 2 tablespoons fresh ginger, grated
  • 2 cups shiitake mushrooms, sliced
  • 1/4 cup green onions, sliced
  • 1/2 cup firm tofu, cubed

Directions:

  1. In a large pot, heat the sesame oil over medium heat. Add the garlic and ginger, and sauté for 1 minute.
  2. Add the mushrooms and green onions and sauté for an additional 3 minutes.
  3. Pour in the vegetable broth and bring to a boil.
  4. Reduce the heat and simmer for 10 minutes.
  5. In a small bowl, whisk together the miso paste and 1/2 cup of the hot broth.
  6. Add the miso mixture to the pot and stir until dissolved.
  7. Add the tofu and simmer for an additional 5 minutes.
  8. Serve hot and enjoy!
