Miso Soup with Shiitake Mushrooms and Tofu
This delicious vegan soup is a great way to get in your daily nutrients. The combination of miso, shiitake mushrooms, and tofu provide a hearty and robust flavor perfect for any meal.
Ingredients:
- 4 cups vegetable broth
- 1/4 cup white miso paste
- 2 tablespoons sesame oil
- 2 cloves garlic, minced
- 2 tablespoons fresh ginger, grated
- 2 cups shiitake mushrooms, sliced
- 1/4 cup green onions, sliced
- 1/2 cup firm tofu, cubed
Directions:
- In a large pot, heat the sesame oil over medium heat. Add the garlic and ginger, and sauté for 1 minute.
- Add the mushrooms and green onions and sauté for an additional 3 minutes.
- Pour in the vegetable broth and bring to a boil.
- Reduce the heat and simmer for 10 minutes.
- In a small bowl, whisk together the miso paste and 1/2 cup of the hot broth.
- Add the miso mixture to the pot and stir until dissolved.
- Add the tofu and simmer for an additional 5 minutes.
- Serve hot and enjoy!
