Ratatouille Soup with Eggplant and Zucchini Mix

Ingredients:
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, cut into 1/2 inch cubes
- 1 eggplant, cubed
- 1 zucchini, cut into 1/2 inch cubes
- 2 teaspoons of dried oregano
- 1 teaspoon of dried basil
- 1 (14.5 ounce) can of diced tomatoes
- 1 (14.5 ounce) can of tomato sauce
- 1 (14.5 ounce) can of vegetable broth
- 1/4 teaspoon of salt
- 1/4 teaspoon of black pepper
Directions:
- Heat oil in a large pot over medium-high heat. Add the onion, garlic, and bell pepper. Cook for about 5 minutes or until the vegetables are soft.
- Add the eggplant and zucchini and cook for an additional 5 minutes.
- Stir in the oregano, basil, diced tomatoes, tomato sauce, and vegetable broth. Bring the soup to a simmer.
