Ingredients:

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, cut into 1/2 inch cubes
  • 1 eggplant, cubed
  • 1 zucchini, cut into 1/2 inch cubes
  • 2 teaspoons of dried oregano
  • 1 teaspoon of dried basil
  • 1 (14.5 ounce) can of diced tomatoes
  • 1 (14.5 ounce) can of tomato sauce
  • 1 (14.5 ounce) can of vegetable broth
  • 1/4 teaspoon of salt
  • 1/4 teaspoon of black pepper

Directions:

  1. Heat oil in a large pot over medium-high heat. Add the onion, garlic, and bell pepper. Cook for about 5 minutes or until the vegetables are soft.
