Roasted Squash and Pear Soup with Sage

This delicious and healthy soup is a perfect autumnal dish. Roasted squash and pears are combined with sage, vegetable broth, and a hint of cream to create a comforting and savory soup. Ingredients:

  • 2 tablespoons olive oil
  • 1 large butternut squash, peeled, seeded, and cubed
  • 2 pears, cored and cubed
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon fresh sage, chopped
  • 4 cups vegetable broth
  • 1/4 cup heavy cream
  • Salt and pepper to taste

Directions:

  1. Preheat oven to 425°F. Line baking sheet with parchment paper.
  2. In a large bowl, toss together squash, pears, onion, garlic, sage, and olive oil. Spread evenly onto prepared baking sheet.
  3. Bake for 25 minutes, stirring halfway through.
  4. In a large pot, bring vegetable broth to a boil. Add roasted vegetables and simmer for 10 minutes.
  5. Using an immersion blender, blend soup until desired consistency is reached. Alternatively, carefully transfer soup to blender in batches and blend until smooth.
  6. Stir in heavy cream and season with salt and pepper to taste.
  7. Serve soup hot with extra sage for garnish, if desired.
