Roasted Squash and Pear Soup with Sage
This delicious and healthy soup is a perfect autumnal dish. Roasted squash and pears are combined with sage, vegetable broth, and a hint of cream to create a comforting and savory soup. Ingredients:
- 2 tablespoons olive oil
- 1 large butternut squash, peeled, seeded, and cubed
- 2 pears, cored and cubed
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tablespoon fresh sage, chopped
- 4 cups vegetable broth
- 1/4 cup heavy cream
- Salt and pepper to taste
Directions:
- Preheat oven to 425°F. Line baking sheet with parchment paper.
- In a large bowl, toss together squash, pears, onion, garlic, sage, and olive oil. Spread evenly onto prepared baking sheet.
- Bake for 25 minutes, stirring halfway through.
- In a large pot, bring vegetable broth to a boil. Add roasted vegetables and simmer for 10 minutes.
- Using an immersion blender, blend soup until desired consistency is reached. Alternatively, carefully transfer soup to blender in batches and blend until smooth.
- Stir in heavy cream and season with salt and pepper to taste.
- Serve soup hot with extra sage for garnish, if desired.
