Pan-Seared Scallops with Gluten-Free Polenta

Ingredients:
- 1/2 cup gluten-free polenta
- 2 tablespoons butter
- 1/2 cup grated Parmesan cheese
- 1/2 cup heavy cream
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 12 large scallops
- 2 tablespoons olive oil
Directions:
- 1. In a medium saucepan, bring 2 cups of water to a boil. Slowly whisk in the polenta and reduce heat to low.
- 2. Stir in butter, Parmesan cheese, heavy cream, garlic powder, salt and pepper. Simmer for 10-15 minutes, stirring often until polenta is thick and creamy.
- 3. Heat a large skillet over medium-high heat. Once hot, add olive oil. Pat the scallops dry with a paper towel and season with salt and pepper.
- 4. Place the scallops in the hot skillet. Cook for 2-3 minutes on each side, until golden brown. Remove from heat and set aside.
- 5. Divide the polenta among four plates and top with the seared scallops.
- 6. Serve with a sprinkle of Parmesan cheese and a wedge of lemon.
