Pan-Seared Scallops with Gluten-Free Polenta

Ingredients:

  • 1/2 cup gluten-free polenta
  • 2 tablespoons butter
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup heavy cream
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 12 large scallops
  • 2 tablespoons olive oil

Directions:

  1. 1. In a medium saucepan, bring 2 cups of water to a boil. Slowly whisk in the polenta and reduce heat to low.
  2. 2. Stir in butter, Parmesan cheese, heavy cream, garlic powder, salt and pepper. Simmer for 10-15 minutes, stirring often until polenta is thick and creamy.
