Gluten-Free Thai Coconut Curry Noodles
This delicious and healthy vegan dish is a perfect combination of creamy coconut curry and flavorful Thai noodles. It’s easy to make and will leave you feeling full and satisfied.
Ingredients:
- 2 tablespoons vegetable oil
- 2 cloves garlic, minced
- 1/2 onion, diced
- 2 tablespoons curry powder
- 1 teaspoon ground cumin
- 1/4 teaspoon ground turmeric
- 1 (14-ounce) can coconut milk
- 1/4 cup vegetable broth
- 2 tablespoons soy sauce
- 1 teaspoon honey
- 1/2 teaspoon crushed red pepper flakes
- 1/4 teaspoon ground ginger
- 2 cups cooked gluten-free noodles
- 1/2 cup frozen peas, thawed
- Salt and freshly ground black pepper, to taste
- 2 tablespoons chopped fresh cilantro leaves
Directions:
- Heat oil in a large skillet over medium heat.
- Add garlic and onion, and cook, stirring frequently, until onion is translucent, about 3-4 minutes.
- Stir in curry powder, cumin and turmeric until fragrant, about 1 minute.
- Whisk in coconut milk, broth, soy sauce, honey, red pepper flakes and ginger until well combined.
- Bring to a simmer; reduce heat and simmer until slightly thickened, about 5-7 minutes.
- Stir in noodles and peas until heated through, about 2 minutes.
- Season with salt and pepper, to taste.
- Serve immediately, garnished with cilantro, if desired.
