Gluten-Free Eggplant Parmigiana
This delicious and healthy Gluten-Free Eggplant Parmigiana is a great vegetarian dinner option that is also vegan-friendly. Layers of eggplant, marinara sauce, and vegan cheese, all baked in the oven and topped with fresh parsley. This Italian-inspired dish is sure to be a hit with everyone in the family!
Ingredients:
- 2 large eggplants, sliced into 1/4 inch rounds
- 3 cups marinara sauce
- 1/2 cup vegan parmesan cheese
- 1/2 cup vegan mozzarella cheese
- 1/2 cup fresh parsley, chopped
- 1 tablespoon olive oil
- Salt and pepper to taste
Directions:
- Preheat oven to 375°F (190°C).
- Arrange eggplant slices on a large baking sheet. Brush both sides of the eggplant slices with olive oil and season with salt and pepper.
- Bake for 25 minutes, flipping the slices halfway through cooking.
- In a 9×13 inch baking dish, spread 1 cup of marinara sauce on the bottom.
- Layer half of the eggplant slices over the sauce, followed by another cup of marinara sauce, and then the vegan parmesan and mozzarella cheeses.
- Top with remaining eggplant slices, followed by the remaining cup of marinara sauce.
- Bake for 30 minutes, until cheese is melted and bubbly.
