This delicious Lamb Tagine with Apricots is the perfect meal for a cozy night in! The combination of tender lamb, sweet apricots, and savory spices makes for a delicious and flavorful dinner.
Ingredients:
- 2 tablespoons of olive oil
- 2 pounds of lamb shoulder, cut into 1-inch cubes
- 1 onion, finely chopped
- 3 cloves of garlic, minced
- 1 teaspoon of ground cumin
- 1 teaspoon of ground cinnamon
- 1 teaspoon of ground ginger
- 1 teaspoon of smoked paprika
- 1/2 teaspoon of ground turmeric
- 1/2 teaspoon of cayenne pepper
- 1 can of diced tomatoes (14.5 ounces)
- 1 cup of vegetable broth
- 1/2 cup of dried apricots, chopped
- 1/2 cup of golden raisins
- 1/4 cup of sliced almonds
- Salt and pepper to taste
- Fresh parsley, for garnish (optional)
Directions:
- Heat the olive oil in a large Dutch oven or stockpot over medium-high heat. Add the lamb cubes and brown them on all sides. Remove the lamb from the pot and set aside.
- Add the onion and garlic to the pot and cook until softened, about 5 minutes. Add the cumin, cinnamon, ginger, smoked paprika, turmeric, and cayenne pepper and cook for 1 minute, stirring constantly.
- Add the diced tomatoes, vegetable broth, and lamb cubes to the pot. Stir to combine. Cover the pot and reduce the heat to low. Simmer for 1 hour, stirring occasionally.
- Add the apricots, raisins, and almonds to the pot. Stir to combine and cook for 30 minutes, stirring occasionally.
- Season the tagine with salt and pepper to taste. Garnish with fresh parsley, if desired.
- Serve the tagine over cooked couscous or quinoa.
