Grilled Polenta with Ratatouille

Ingredients:
- 2 cups polenta
- 4 cups vegetable broth
- 1 eggplant, diced

- 1 red bell pepper, diced

- Salt and pepper to taste
Directions:
- In a medium saucepan, bring the vegetable broth to a boil. Slowly add the polenta, stirring constantly to prevent lumps. Reduce heat to low and cook for 10 minutes, stirring frequently.
