This delicious and healthy gluten-free dinner recipe is easy to make and full of flavor. Start off by marinating the pork tenderloin in a mix of soy sauce, garlic, ginger, and sesame oil. Ingredients:
- 2 lbs pork tenderloin
- 1/4 cup soy sauce
- 1 tablespoon garlic, minced
- 2 tablespoons ginger, grated
- 1 tablespoon sesame oil
- 1/2 cup plums, chopped
- 1/4 cup honey
- 1/4 cup apple cider vinegar
Directions:
- In a bowl, mix together the soy sauce, garlic, ginger, and sesame oil. Add the pork tenderloin to the bowl and coat with the marinade. Cover and place in the refrigerator for 2 hours.
- Preheat the oven to 375 degrees F. Place the pork tenderloin in a baking dish and bake for 25-30 minutes or until cooked through.
- While the pork is baking, make the plum sauce. Place the chopped plums, honey, and apple cider vinegar in a saucepan. Bring to a boil then reduce the heat and simmer for 10 minutes or until thickened.
