This delicious and healthy gluten-free dinner recipe is easy to make and full of flavor. Start off by marinating the pork tenderloin in a mix of soy sauce, garlic, ginger, and sesame oil. Then, bake the pork in the oven until it is cooked through. Finally, top with a homemade plum sauce for a sweet and savory finish.

Ingredients:

  • 2 lbs pork tenderloin
  • 1/4 cup soy sauce
  • 1 tablespoon garlic, minced
  • 2 tablespoons ginger, grated
  • 1 tablespoon sesame oil
  • 1/2 cup plums, chopped
  • 1/4 cup honey
  • 1/4 cup apple cider vinegar

Directions:

  1. In a bowl, mix together the soy sauce, garlic, ginger, and sesame oil. Add the pork tenderloin to the bowl and coat with the marinade. Cover and place in the refrigerator for 2 hours.
  2. Preheat the oven to 375 degrees F. Place the pork tenderloin in a baking dish and bake for 25-30 minutes or until cooked through.
  3. While the pork is baking, make the plum sauce. Place the chopped plums, honey, and apple cider vinegar in a saucepan. Bring to a boil then reduce the heat and simmer for 10 minutes or until thickened.
  4. Once the pork is cooked through, let it rest for 10 minutes before slicing. Slice the pork into 1/2 inch thick slices.
  5. Place the sliced pork on a serving platter and top with the plum sauce.
