Gluten-Free Quinoa and Black Bean Stuffed Bell Peppers
This vegan-friendly dish is a fantastic way to get your greens! Stuffed bell peppers are filled with a delicious mixture of quinoa and black beans, seasoned with spices and herbs for an extra burst of flavor. Ingredients:
- 4 bell peppers, cut in half and seeded
- 1 cup cooked quinoa
- 1 can black beans, rinsed and drained
- 1/2 cup diced onion
- 1/2 cup diced red pepper
- 1/2 cup corn
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup salsa
- Shredded cheese, optional
- Fresh cilantro, optional
Directions:
- Preheat oven to 375 degrees F.
- Place bell peppers cut-side up on a baking sheet.
- In a medium bowl, combine cooked quinoa, black beans, onion, red pepper, corn, chili powder, cumin, garlic powder, salt and black pepper. Stir to combine.
- Divide mixture evenly between the bell pepper halves.
- Top each bell pepper with a spoonful of salsa.
- Bake for 25-30 minutes, or until peppers are tender.
- If desired, top with shredded cheese and fresh cilantro before serving. Enjoy!
