Gluten-Free Miso-Glazed Salmon and Bok Choy
This mouth-watering dish of gluten-free miso-glazed salmon and bok choy is perfect for a light and healthy meal. The light miso glaze gives the salmon a wonderful flavor, while the bok choy adds a hint of bitterness, making it a delicious combination.
Ingredients:
- 2 tablespoons miso paste
- 2 tablespoons honey
- 2 tablespoons mirin
- 2 tablespoons soy sauce
- 4 (6-ounce) salmon fillets
- 2 tablespoons olive oil
- 2 bunches bok choy, trimmed and cut into 1-inch pieces
- 2 cloves garlic, minced
- 1 teaspoon grated fresh ginger
- 1/2 teaspoon sesame oil
- Salt and freshly ground black pepper, to taste
- 2 tablespoons sesame seeds, toasted
Directions:
- In a small bowl, whisk together miso paste, honey, mirin, and soy sauce. Set aside.
- Heat olive oil in a large skillet over medium-high heat. Season salmon with salt and pepper, to taste. Add salmon to the skillet and cook until golden brown and cooked through, about 2-3 minutes per side.
- Add bok choy, garlic, ginger, and sesame oil to the skillet. Cook, stirring occasionally, until bok choy is just tender, about 3-4 minutes. Add miso mixture and stir to combine.
- Reduce heat to low and simmer until sauce has thickened, about 2-3 minutes.
- Serve salmon and bok choy immediately, garnished with sesame seeds, if desired.
