Creamy Sweet Potato and Coconut Soup with Lemongrass

Ingredients:
- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 large sweet potatoes, peeled and diced
- 2 cups vegetable broth
- 1 can (14 ounces) coconut milk
- 1 tablespoon grated fresh ginger
- 2 stalks of lemongrass, cut into 1 inch pieces
- Salt and pepper, to taste
- Toppings such as chopped fresh herbs, toasted coconut flakes, or croutons
Directions:
- Heat the olive oil in a large pot over medium-high heat. Add the onion and garlic and sauté until tender and fragrant, about 3 minutes.
- Add the sweet potatoes and sauté for an additional 3 minutes.
- Add the vegetable broth, coconut milk, ginger, and lemongrass and bring to a boil. Reduce the heat and simmer until the sweet potatoes are very tender, about 10 minutes.
- Remove the lemongrass from the pot and discard. Use an immersion blender to puree the soup until smooth. If you do not have an immersion blender, you can transfer the soup to a blender and blend in batches.
- Return the soup to the pot and season with salt and pepper to taste.
- Serve the soup hot with desired toppings.
