Andouille Sausage Cajun Carnival 7-Layer Salad
This Andouille Sausage Cajun Carnival 7-Layer Salad is the perfect way to enjoy the flavors of the bayou. Ingredients:
- 1 cup cooked and crumbled Andouille sausage
- 2 cups cooked white rice
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1/2 cup sliced scallions
- 1/2 cup black beans, drained and rinsed
- 1/2 cup corn, cooked and cooled
- 1/2 cup diced tomatoes
- 1/2 cup shredded cheese
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1 tablespoon Worcestershire sauce
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
Directions:
- In a medium bowl, mix together the mayo, sour cream, Worcestershire sauce, garlic powder, onion powder, salt, and pepper.
- In a large bowl, combine the cooked Andouille sausage, white rice, bell peppers, scallions, black beans, corn, tomatoes, and cheese.
- Pour the dressing over the salad and mix until everything is evenly coated.
- Layer the salad in a large bowl as follows: layer of sausage, layer of rice, layer of bell peppers, layer of scallions, layer of black beans, layer of corn, layer of tomatoes, and layer of cheese.
- Cover and refrigerate for at least 30 minutes.
- Remove from refrigerator and let sit at room temperature for 15 minutes before serving.
