Lemon Almond Drizzle Cake

Ingredients:

  • 200g unsalted butter, softened
  • 200g caster sugar
  • 4 large eggs
  • 200g self-raising flour
  • 100g ground almonds
  • Zest of 2 lemons
  • 50ml lemon juice
  • 100g icing sugar
  • 50g flaked almonds, toasted

Instructions:

  1. Preheat the oven to 180°C and grease a loaf tin with butter.
  2. In a large mixing bowl, cream together the butter and sugar until light and fluffy.
  3. Add the eggs one at a time, beating well after each addition.
  4. Fold in the flour, ground almonds, and lemon zest until the mixture is just combined.
  5. Pour the batter into the prepared loaf tin and smooth the surface.
  6. Bake for 40-45 minutes, or until a skewer inserted into the center of the cake comes out clean.
  7. While the cake is still warm, mix together the lemon juice and icing sugar to make the drizzle.
  8. Use a skewer to poke holes all over the top of the cake, then pour the lemon drizzle over the top.
  9. Leave the cake to cool completely in the tin.
  10. Once cooled, remove the cake from the tin and top with toasted flaked almonds. Serve and enjoy!
