Ingredients:
- 2 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup vegetable oil
- 1/2 cup unsweetened applesauce
- 1/4 cup freshly squeezed lime juice
- 1/4 cup freshly squeezed lemon juice
- Zest of 1 lemon
- 1/2 cup non-dairy milk (such as almond or soy milk)
- 2 tablespoons white or apple cider vinegar
- 1/4 cup finely chopped fresh mint leaves
- For the glaze:
- 1/4 cup freshly squeezed lemon juice
- 1/4 cup granulated sugar
- 2 tablespoons rum (optional)
- Additional fresh mint leaves and lemon slices, for garnish
Instructions:
- Preheat the oven to 350°F (180°C). Grease a 9-inch (23cm) cake pan with vegetable oil.
- In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.
- In a separate bowl, whisk together the vegetable oil, applesauce, lime juice, lemon juice, lemon zest, non-dairy milk, and white or apple cider vinegar.
- Add the wet ingredients to the dry ingredients and mix until just combined. Fold in the chopped mint leaves.
- Pour the batter into the prepared cake pan and smooth the top with a spatula. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
