Ingredients:

  • 2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup vegetable oil
  • 1/2 cup unsweetened applesauce
  • 1/4 cup freshly squeezed lime juice
  • 1/4 cup freshly squeezed lemon juice
  • Zest of 1 lemon
  • 1/2 cup non-dairy milk (such as almond or soy milk)
  • 2 tablespoons white or apple cider vinegar
  • 1/4 cup finely chopped fresh mint leaves
  • For the glaze:
  • 1/4 cup freshly squeezed lemon juice
  • 1/4 cup granulated sugar
  • 2 tablespoons rum (optional)
  • Additional fresh mint leaves and lemon slices, for garnish

Instructions:

  1. Preheat the oven to 350°F (180°C). Grease a 9-inch (23cm) cake pan with vegetable oil.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.
  3. In a separate bowl, whisk together the vegetable oil, applesauce, lime juice, lemon juice, lemon zest, non-dairy milk, and white or apple cider vinegar.
  4. Add the wet ingredients to the dry ingredients and mix until just combined. Fold in the chopped mint leaves.
  5. Pour the batter into the prepared cake pan and smooth the top with a spatula. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
