Brown butter adds a nutty flavor to these rich and chewy cookies, which are studded with chunks of toffee.
Ingredients:
- 1 cup unsalted butter
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 2 eggs
- 2 teaspoons vanilla extract
- 2 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 cup toffee bits
Instructions:
- In a medium saucepan, melt the butter over medium heat. Cook, stirring occasionally, until the butter turns a golden brown color and has a nutty aroma, about 5-7 minutes.
- Remove the butter from the heat and pour it into a mixing bowl.
- Add the brown sugar and granulated sugar to the bowl and beat on medium speed until light and fluffy, about 2-3 minutes.
- Add in the eggs and vanilla extract, and mix until well combined.
- In a separate bowl, whisk together the flour, baking soda, and salt.
- Gradually add the flour mixture to the butter mixture, mixing until just combined.
- Stir in the toffee bits.
- Preheat the oven to 350°F (180°C). Line a baking sheet with parchment paper.
- Use a cookie scoop or spoon to drop the dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes, or until the edges are lightly golden.
- Allow the cookies to cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
