Ingredients:

  • 1 lb. ground beef
  • 1 cup cooked elbow macaroni
  • 1 cup shredded cheddar cheese
  • 1/4 cup breadcrumbs
  • 1 egg, lightly beaten
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions:

  1. Preheat the oven to 375°F.
  2. In a large bowl, combine the ground beef, cooked macaroni, shredded cheddar cheese, breadcrumbs, egg, salt, and pepper. Mix well.
  3. Form the meat mixture into balls, making a small indentation in each one.
  4. Spoon a small amount of mac and cheese into each indentation, then press the meat mixture around it to seal.
  5. Heat the olive oil in a large skillet over medium-high heat. Add the meatballs and cook until browned on all sides.
  6. Transfer the meatballs to a baking dish, and bake in the preheated oven for 15-20 minutes, or until cooked through.
  7. Serve hot, garnished with extra shredded cheddar cheese if desired.
