Andouille Sausage and Alligator Gumbo Recipe
This classic Cajun dish combines smoky andouille sausage with tender chunks of alligator meat for a unique and flavorful gumbo. Simmered with a rich broth and a medley of vegetables, this dish is sure to satisfy your palate. Serve it over hot cooked rice for a complete meal.
Ingredients:
- 1 lb. andouille sausage, cut into 1-inch slices
- 1 lb. alligator meat, cut into cubes
- 1 onion, diced
- 1 bell pepper, diced
- 3 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes, drained
- 2 cups chicken broth
- 2 tablespoons Worcestershire sauce
- 1 teaspoon paprika
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1/2 teaspoon cayenne pepper
- 2 bay leaves
- Salt and pepper, to taste
- 2 tablespoons cornstarch
- 3 tablespoons cold water
- 2 tablespoons chopped fresh parsley, for garnish
- Hot cooked rice, for serving
Directions:
- In a large pot over medium-high heat, cook the andouille sausage until lightly browned. Remove the sausage from the pot and set aside.
- Add the alligator meat to the pot and cook until lightly browned. Remove the alligator from the pot and set aside.
- Add the onion, bell pepper, and garlic to the pot and cook until softened, about 5 minutes.
- Stir in the diced tomatoes, chicken broth, Worcestershire sauce, paprika, oregano, thyme, cayenne pepper, bay leaves, and salt and pepper. Bring to a boil, then reduce the heat to low and simmer for 30 minutes.
- Stir in the cornstarch and cold water and simmer for an additional 10 minutes.
- Add the andouille sausage and alligator and simmer for 5 more minutes.
- Garnish with parsley and serve over hot cooked rice. Enjoy!
