Andouille Sausage and Alligator Gumbo Recipe

This classic Cajun dish combines smoky andouille sausage with tender chunks of alligator meat for a unique and flavorful gumbo. Simmered with a rich broth and a medley of vegetables, this dish is sure to satisfy your palate. Serve it over hot cooked rice for a complete meal.

Ingredients:

  • 1 lb. andouille sausage, cut into 1-inch slices
  • 1 lb. alligator meat, cut into cubes
  • 1 onion, diced
  • 1 bell pepper, diced
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes, drained
  • 2 cups chicken broth
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon cayenne pepper
  • 2 bay leaves
  • Salt and pepper, to taste
  • 2 tablespoons cornstarch
  • 3 tablespoons cold water
  • 2 tablespoons chopped fresh parsley, for garnish
  • Hot cooked rice, for serving

Directions:

  1. In a large pot over medium-high heat, cook the andouille sausage until lightly browned. Remove the sausage from the pot and set aside.
  2. Add the alligator meat to the pot and cook until lightly browned. Remove the alligator from the pot and set aside.
  3. Add the onion, bell pepper, and garlic to the pot and cook until softened, about 5 minutes.
  4. Stir in the diced tomatoes, chicken broth, Worcestershire sauce, paprika, oregano, thyme, cayenne pepper, bay leaves, and salt and pepper. Bring to a boil, then reduce the heat to low and simmer for 30 minutes.
  5. Stir in the cornstarch and cold water and simmer for an additional 10 minutes.
  6. Add the andouille sausage and alligator and simmer for 5 more minutes.
  7. Garnish with parsley and serve over hot cooked rice. Enjoy!
