Ingredients:

  • 1 lb. Andouille sausage, sliced
  • 1 lb. macaroni
  • 4 tablespoons butter
  • 4 tablespoons all-purpose flour
  • 4 cups milk
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 teaspoon Cajun seasoning
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper
  • 2 cups shredded sharp cheddar cheese
  • 2 tablespoons grated Parmesan cheese
  • 1/2 cup bread crumbs
  • Salt and pepper to taste

Directions:

  1. Preheat oven to 350°F.
  2. Cook macaroni according to package instructions, drain, and set aside.
  3. In a large skillet over medium heat, cook the Andouille sausage until browned. Remove from heat and set aside.
  4. In a large saucepan over medium heat, melt the butter. Add the flour and whisk together. Slowly add the milk, whisking constantly until the sauce is thick and creamy.
  5. Add the garlic powder, onion powder, Cajun seasoning, smoked paprika, and cayenne pepper. Add salt and pepper to taste.
  6. Add the shredded cheese and stir until melted. Add the cooked macaroni and Andouille sausage and stir until combined.
  7. Pour the macaroni and cheese mixture into a greased 9×13 inch baking dish. Sprinkle the Parmesan cheese and bread crumbs over the top.
  8. Bake for 25-30 minutes, or until the cheese is bubbly and the crumbs are golden brown. Serve warm.
