Andouille Sausage Cajun Mac and Cheese

Ingredients:
- 1 lb. Andouille sausage, sliced
- 1 lb. macaroni
- 4 tablespoons butter
- 4 tablespoons all-purpose flour
- 4 cups milk
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1 teaspoon Cajun seasoning
- 1 teaspoon smoked paprika
- 1/2 teaspoon cayenne pepper
- 2 cups shredded sharp cheddar cheese
- 2 tablespoons grated Parmesan cheese
- 1/2 cup bread crumbs
- Salt and pepper to taste
Directions:
- Preheat oven to 350°F.
- Cook macaroni according to package instructions, drain, and set aside.
- In a large skillet over medium heat, cook the Andouille sausage until browned. Remove from heat and set aside.
- In a large saucepan over medium heat, melt the butter. Add the flour and whisk together. Slowly add the milk, whisking constantly until the sauce is thick and creamy.
- Add the garlic powder, onion powder, Cajun seasoning, smoked paprika, and cayenne pepper. Add salt and pepper to taste.
- Add the shredded cheese and stir until melted. Add the cooked macaroni and Andouille sausage and stir until combined.
- Pour the macaroni and cheese mixture into a greased 9×13 inch baking dish. Sprinkle the Parmesan cheese and bread crumbs over the top.
- Bake for 25-30 minutes, or until the cheese is bubbly and the crumbs are golden brown. Serve warm.
