Asian-Style Pot Roast with Soy and Star Anise

This Asian-style pot roast is a unique and delicious meal that is perfect for a cozy dinner. The combination of soy sauce, star anise, and various other Asian-inspired seasonings creates a complex and flavorful dish that is sure to please the whole family. Ingredients:

  • 2 lbs beef chuck roast
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons fresh ginger, grated
  • 1/4 cup soy sauce
  • 1/4 cup brown sugar
  • 1/4 cup rice vinegar
  • 1/4 cup water
  • 2 star anise pods
  • 2 cinnamon sticks
  • 3 green onions, chopped

Directions:

  1. Heat the olive oil in a large pot over medium-high heat. Add the beef chuck roast and brown on all sides.
  2. Add the onion, garlic, and ginger to the pot and cook until the onion is softened, about 5 minutes.
  3. In a small bowl, mix together the soy sauce, brown sugar, rice vinegar, water, star anise, and cinnamon sticks. Pour over the beef.
  4. Bring the mixture to a boil, reduce the heat, and cover the pot. Simmer for 1 hour and 15 minutes, or until the beef is tender.
  5. Remove the pot from the heat and let sit for 10 minutes.
  6. Remove the star anise and cinnamon sticks and discard.
  7. Serve the pot roast with the green onions sprinkled over the top. Enjoy!
