Asian-Style Pot Roast with Soy and Star Anise
This Asian-style pot roast is a unique and delicious meal that is perfect for a cozy dinner. The combination of soy sauce, star anise, and various other Asian-inspired seasonings creates a complex and flavorful dish that is sure to please the whole family. Ingredients:
- 2 lbs beef chuck roast
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons fresh ginger, grated
- 1/4 cup soy sauce
- 1/4 cup brown sugar
- 1/4 cup rice vinegar
- 1/4 cup water
- 2 star anise pods
- 2 cinnamon sticks
- 3 green onions, chopped
Directions:
- Heat the olive oil in a large pot over medium-high heat. Add the beef chuck roast and brown on all sides.
- Add the onion, garlic, and ginger to the pot and cook until the onion is softened, about 5 minutes.
- In a small bowl, mix together the soy sauce, brown sugar, rice vinegar, water, star anise, and cinnamon sticks. Pour over the beef.
- Bring the mixture to a boil, reduce the heat, and cover the pot. Simmer for 1 hour and 15 minutes, or until the beef is tender.
- Remove the pot from the heat and let sit for 10 minutes.
- Remove the star anise and cinnamon sticks and discard.
- Serve the pot roast with the green onions sprinkled over the top. Enjoy!
