Ingredients:
- 3 lbs beef chuck roast
- 2 tablespoons olive oil
- 1 large onion, diced
- 4 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 teaspoon smoked paprika
- 1 teaspoon salt
- 1 teaspoon pepper
- 1/2 cup bacon, diced
- 1 (12 ounce) bottle beer
- 1 cup beef broth
Directions:
- Preheat oven to 350°F.
- Heat olive oil in a large dutch oven over medium-high heat.
- Season beef chuck roast generously with salt and pepper.
- Add beef to the hot oil and sear on all sides until golden brown. Transfer beef to a plate.
- Lower heat to medium. Add diced bacon and cook until golden and crisp. Remove bacon from the pan and set aside.
- Add diced onion and garlic to the pan and cook until softened, about 5 minutes. Add in thyme, rosemary, smoked paprika, salt, and pepper. Stir to combine.
- Pour in beer and beef broth. Stir to combine.
- Return beef to the pan and bring to a simmer. Cover and transfer to preheated oven. Cook for 2 1/2 hours, or until beef is fork tender.
