Baked Garlic and Cauliflower Macaroni and Cheese

Ingredients:

  • 1 head of cauliflower, cut into small florets
  • 1/4 cup butter
  • 1/4 cup all-purpose flour
  • 2 cloves garlic, minced
  • 2 cups of milk
  • 2 cups of shredded cheese, such as cheddar, mozzarella, or jack
  • 3 cups cooked macaroni
  • Salt and pepper to taste
  • Optional toppings: breadcrumbs, fresh parsley, extra cheese, garlic powder

Directions:

  1. Preheat the oven to 375 degrees F.
  2. Bring a large pot of salted water to a boil. Add the cauliflower florets and cook for 8-10 minutes until tender. Drain and set aside.
  3. In a medium saucepan over medium heat, melt the butter. Add the flour and garlic and whisk to combine. Cook, stirring constantly, for 2-3 minutes until the mixture starts to bubble.
  4. Slowly add the milk, whisking constantly, until the mixture is smooth and thick. Add the cheese and stir until melted. Season with salt and pepper to taste.
  5. In a large bowl, combine the cooked macaroni, cauliflower, and cheese sauce. Pour into an oven-safe baking dish.
  6. Top with breadcrumbs, fresh parsley, extra cheese, and garlic powder, if desired.
  7. Bake for 25-30 minutes until golden and bubbly. Serve hot.
