Baked Stuffed Sweet Potatoes Recipe

Ingredients:
- 4 large sweet potatoes
- 1 15-ounce can of black beans, drained and rinsed
- 1/4 cup red onion, diced
- 1/4 cup bell pepper, diced
- 1/3 cup salsa
- 1/4 cup fresh cilantro, chopped
- 1/2 teaspoon chili powder
- 1/4 teaspoon garlic powder
- 1/4 teaspoon cumin
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup vegan cheese, shredded
Directions:
- Preheat the oven to 400 degrees F (204 C).
- Poke a few holes in each sweet potato, then wrap them individually in foil and place them on a baking sheet.
- Bake for 45 minutes to an hour, or until the sweet potatoes are tender when pierced with a fork.
- Meanwhile, combine the black beans, red onion, bell pepper, salsa, cilantro, chili powder, garlic powder, cumin, salt, and pepper in a mixing bowl.
- Once the sweet potatoes are done baking, remove them from the oven and carefully unwrap them. Slice each one in half, lengthwise.
- Fill the sweet potatoes with the black bean mixture, top with vegan cheese, and place back in the oven for 8-10 minutes, or until the cheese is melted.
- Serve warm and enjoy!
