Baked Stuffed Sweet Potatoes Recipe

Ingredients:

  • 4 large sweet potatoes
  • 1 15-ounce can of black beans, drained and rinsed
  • 1/4 cup red onion, diced
  • 1/4 cup bell pepper, diced
  • 1/3 cup salsa
  • 1/4 cup fresh cilantro, chopped
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon cumin
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup vegan cheese, shredded

Directions:

  1. Preheat the oven to 400 degrees F (204 C).
  2. Poke a few holes in each sweet potato, then wrap them individually in foil and place them on a baking sheet.
  3. Bake for 45 minutes to an hour, or until the sweet potatoes are tender when pierced with a fork.
  4. Meanwhile, combine the black beans, red onion, bell pepper, salsa, cilantro, chili powder, garlic powder, cumin, salt, and pepper in a mixing bowl.
  5. Once the sweet potatoes are done baking, remove them from the oven and carefully unwrap them. Slice each one in half, lengthwise.
  6. Fill the sweet potatoes with the black bean mixture, top with vegan cheese, and place back in the oven for 8-10 minutes, or until the cheese is melted.
  7. Serve warm and enjoy!
