Banana Bread with Caramelized Brown Sugar Glaze Recipe

Ingredients:
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 3 ripe bananas, mashed
- 3/4 cup butter, melted
- 1 cup brown sugar
- 1/2 cup white sugar
- 2 eggs, lightly beaten
- 2 teaspoons vanilla extract
- 1/2 cup chopped pecans (optional)
- 3 tablespoons butter
- 3 tablespoons brown sugar
- 2 tablespoons heavy cream
Directions:
- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9×5 inch loaf pan.
- In a medium bowl, combine flour, baking soda, baking powder and salt. Set aside.
- In a large bowl, cream together the melted butter, brown sugar and white sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla and mashed bananas until combined. Add the dry ingredients and mix together.
- If desired, stir in the chopped pecans. Pour the batter into the prepared loaf pan.
- Bake for 60 minutes, or until a toothpick inserted into the center of the loaf comes out clean. Let cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.
- To make the glaze, melt the butter in a small saucepan over medium heat. Add the brown sugar and stir together until dissolved. Add the heavy cream and bring to a simmer. Simmer for 1 minute, stirring constantly, then remove from heat and let cool.
- When the banana bread is cool, pour the glaze over top and let set before serving. Enjoy!
