Ingredients:

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3 ripe bananas, mashed
  • 3/4 cup butter, melted
  • 1 cup brown sugar
  • 1/2 cup white sugar
  • 2 eggs, lightly beaten
  • 2 teaspoons vanilla extract
  • 1/2 cup chopped pecans (optional)
  • 3 tablespoons butter
  • 3 tablespoons brown sugar
  • 2 tablespoons heavy cream

Directions:

  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9×5 inch loaf pan.
  2. In a medium bowl, combine flour, baking soda, baking powder and salt. Set aside.
  3. In a large bowl, cream together the melted butter, brown sugar and white sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla and mashed bananas until combined. Add the dry ingredients and mix together.
  4. If desired, stir in the chopped pecans. Pour the batter into the prepared loaf pan.
  5. Bake for 60 minutes, or until a toothpick inserted into the center of the loaf comes out clean. Let cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.
  6. To make the glaze, melt the butter in a small saucepan over medium heat. Add the brown sugar and stir together until dissolved. Add the heavy cream and bring to a simmer. Simmer for 1 minute, stirring constantly, then remove from heat and let cool.
  7. When the banana bread is cool, pour the glaze over top and let set before serving. Enjoy!
