Beef and Mushroom Stroganoff with Red Wine Sauce

Ingredients:

  • 1 1/2 pounds beef chuck, cut into thin strips
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1/2 cup finely chopped onion
  • 2 cups sliced fresh mushrooms
  • 1/2 cup dry red wine
  • 1 cup beef broth
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 1/4 cup sour cream
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup chopped fresh parsley
  • 1/2 cup cooked egg noodles

Directions:

  1. Heat the oil in a large skillet over medium-high heat. Add the beef and cook until browned, about 5 minutes.
  2. Add the garlic and onion and cook until soft, about 5 minutes.
  3. Add the mushrooms and cook until softened, about 5 minutes.
  4. Add the red wine and cook for 1 minute.
  5. Stir in the beef broth, Worcestershire sauce, and mustard and bring to a simmer.
  6. Add the sour cream, salt, and pepper and stir to combine.
  7. Simmer for 10 minutes.
  8. Stir in the parsley and cooked egg noodles and cook for 2 minutes more.
