Beef and Mushroom Stroganoff with Red Wine Sauce

Ingredients:
- 1 1/2 pounds beef chuck, cut into thin strips
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1/2 cup finely chopped onion
- 2 cups sliced fresh mushrooms
- 1/2 cup dry red wine
- 1 cup beef broth
- 1 teaspoon Worcestershire sauce
- 1 teaspoon Dijon mustard
- 1/4 cup sour cream
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup chopped fresh parsley
- 1/2 cup cooked egg noodles
Directions:
- Heat the oil in a large skillet over medium-high heat. Add the beef and cook until browned, about 5 minutes.
- Add the garlic and onion and cook until soft, about 5 minutes.
- Add the mushrooms and cook until softened, about 5 minutes.
- Add the red wine and cook for 1 minute.
- Stir in the beef broth, Worcestershire sauce, and mustard and bring to a simmer.
- Add the sour cream, salt, and pepper and stir to combine.
- Simmer for 10 minutes.
- Stir in the parsley and cooked egg noodles and cook for 2 minutes more.
