Ingredients:

  • 2 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 3/4 cups milk
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 cup fresh or frozen blueberries

Instructions:

  1. In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  2. In a separate bowl, beat the eggs. Add the milk, melted butter, and vanilla extract, and whisk until well combined.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; the batter should still be slightly lumpy.
  4. Gently fold in the blueberries.
  5. Preheat your waffle iron according to the manufacturer’s instructions.
  6. Pour the batter onto the hot waffle iron, using the recommended amount for your specific waffle iron model.
  7. Close the lid and cook until the waffles are golden brown and crisp on the outside.
  8. Carefully remove the waffles from the iron and serve immediately with additional blueberries and your desired toppings.
