Brown butter adds a nutty flavor to these rich and chewy cookies, which are studded with chunks of toffee.

Ingredients:

  • 1 cup unsalted butter
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup toffee bits

Instructions:

  1. In a medium saucepan, melt the butter over medium heat. Cook, stirring occasionally, until the butter turns a golden brown color and has a nutty aroma, about 5-7 minutes.
  2. Remove the butter from the heat and pour it into a mixing bowl.
  3. Add the brown sugar and granulated sugar to the bowl and beat on medium speed until light and fluffy, about 2-3 minutes.
  4. Add in the eggs and vanilla extract, and mix until well combined.
  5. In a separate bowl, whisk together the flour, baking soda, and salt.
  6. Gradually add the flour mixture to the butter mixture, mixing until just combined.
  7. Stir in the toffee bits.
  8. Preheat the oven to 350°F (180°C). Line a baking sheet with parchment paper.
  9. Use a cookie scoop or spoon to drop the dough onto the prepared baking sheet, spacing them about 2 inches apart.
  10. Bake for 10-12 minutes, or until the edges are lightly golden.
  11. Allow the cookies to cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
