Buttery Soft Butterscotch Chip Cookies

These Buttery Soft Butterscotch Chip Cookies are the perfect combination of sweet and salty. Made with a buttery soft cookie base and packed with butterscotch chips for a burst of flavor in every bite, these cookies are sure to be a hit!

Ingredients:

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 cup (2 sticks) unsalted butter, melted
  • 1 cup light brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup butterscotch chips
  • 1 teaspoon sea salt

Directions:

  1. Preheat oven to 325°F. Line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, and baking powder. Set aside.
  3. In the bowl of a stand mixer fitted with the paddle attachment, mix together the melted butter, brown sugar, and granulated sugar until combined.
  4. Add eggs one at a time, mixing until incorporated. Add vanilla extract and mix until combined.
  5. Slowly add the dry ingredients to the wet ingredients and mix until just combined.
  6. Fold in the butterscotch chips.
  7. Using a medium cookie scoop, scoop cookie dough onto the prepared baking sheets, about 2 inches apart. Sprinkle with sea salt. Bake for 12-14 minutes, or until golden brown.
  8. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire cooling rack to cool completely.
