Ingredients:

  • 1 lb. beef stew meat, cut into 1-inch pieces
  • 1 head of cabbage, chopped
  • 3 large carrots, peeled and chopped
  • 3 stalks of celery, chopped
  • 1 large onion, chopped
  • 3 cloves of garlic, minced
  • 4 cups beef broth
  • 1 tbsp. tomato paste
  • 1 tsp. dried thyme
  • 1 tsp. dried rosemary
  • Salt and pepper to taste
  • 2 tbsp. olive oil

Instructions:

  1. Heat olive oil in a large pot over medium-high heat.
  2. Add beef stew meat to the pot and cook until browned on all sides.
  3. Add chopped onion and garlic to the pot and cook for 2-3 minutes, until softened.
  4. Add chopped cabbage, carrots, and celery to the pot, and stir to combine.
  5. Add beef broth, tomato paste, thyme, rosemary, salt, and pepper to the pot, and bring to a boil.
  6. Reduce heat to low, cover the pot, and let simmer for 45-60 minutes, until beef is tender and vegetables are cooked through.
  7. Adjust seasoning to taste and serve hot.
