Ingredients:
- 1 lb. beef stew meat, cut into 1-inch pieces
- 1 head of cabbage, chopped
- 3 large carrots, peeled and chopped
- 3 stalks of celery, chopped
- 1 large onion, chopped
- 3 cloves of garlic, minced
- 4 cups beef broth
- 1 tbsp. tomato paste
- 1 tsp. dried thyme
- 1 tsp. dried rosemary
- Salt and pepper to taste
- 2 tbsp. olive oil
Instructions:
- Heat olive oil in a large pot over medium-high heat.
- Add beef stew meat to the pot and cook until browned on all sides.
- Add chopped onion and garlic to the pot and cook for 2-3 minutes, until softened.
- Add chopped cabbage, carrots, and celery to the pot, and stir to combine.
- Add beef broth, tomato paste, thyme, rosemary, salt, and pepper to the pot, and bring to a boil.
- Reduce heat to low, cover the pot, and let simmer for 45-60 minutes, until beef is tender and vegetables are cooked through.
- Adjust seasoning to taste and serve hot.
