Ingredients:

  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter
  • 2 cups water
  • 4 large eggs
  • 1/2 teaspoon vanilla extract
  • 1 cup heavy cream
  • 1/2 cup sugar
  • 2 tablespoons cornstarch
  • 3 tablespoons cold water

Directions:

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. In a medium bowl, stir together the flour and salt; set aside.
  3. In a medium saucepan, melt the butter in the water over medium heat. Once the butter has melted, turn the heat up to high and bring the mixture to a boil.
  4. Add the flour-salt mixture to the boiling water and reduce the heat to low. Stir vigorously until the dough forms a ball, about 2 minutes.
  5. Remove the dough from the heat and let cool for a few minutes. Add the eggs one at a time, stirring vigorously until the dough is smooth and glossy. Stir in the vanilla.
  6. Using a pastry bag, pipe out the dough onto a greased baking sheet in 6-inch logs. Bake for 25 minutes, or until golden brown.
  7. In a medium bowl, whisk together the cream, sugar, cornstarch and cold water. Heat the mixture over medium-high heat for about 5 minutes, stirring constantly, until it thickens. Remove from heat and let cool.
  8. Once the eclairs have cooled, cut each log in half and fill with the cooled custard cream. Serve and enjoy!
