Cajun-Style Gumbo with Spicy Sausage and Shrimp

  • 2 tablespoons vegetable oil

  • 1 teaspoon smoked paprika
  • 1 teaspoon cayenne pepper
  • 1 teaspoon dried thyme
  • 2 cups chicken broth
  • 1 (14.5 ounce) can diced tomatoes
  • 1/4 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1/4 teaspoon ground red pepper
  • 1/4 teaspoon white sugar
  • 1/2 pound shrimp, peeled and deveined
  • 2 tablespoons chopped fresh parsley

Directions:

  1. Heat the oil in a large Dutch oven over medium heat. Add the onions, garlic, bell pepper, and celery; cook and stir until vegetables are softened, about 5 minutes. Add the spicy sausage and cook until lightly browned, about 5 minutes.
  2. Stir in the smoked paprika, cayenne pepper, and thyme. Pour in the chicken broth and diced tomatoes; bring to a boil. Reduce heat to low and simmer for 10 minutes.
  3. Mix the flour, salt, black pepper, red pepper, and sugar together in a small bowl. Gradually stir the flour mixture into the Dutch oven. Simmer until the sauce thickens, about 10 minutes.
  4. Stir in the shrimp and cook until they turn pink, about 5 minutes. Sprinkle with parsley.
