Cajun-Style Gumbo with Spicy Sausage and Shrimp

- 2 tablespoons vegetable oil
- 1 large onion, diced

- 1 teaspoon smoked paprika
- 1 teaspoon cayenne pepper
- 1 teaspoon dried thyme
- 2 cups chicken broth
- 1 (14.5 ounce) can diced tomatoes
- 1/4 cup all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1/4 teaspoon ground red pepper
- 1/4 teaspoon white sugar
- 1/2 pound shrimp, peeled and deveined
- 2 tablespoons chopped fresh parsley
Directions:
- Heat the oil in a large Dutch oven over medium heat. Add the onions, garlic, bell pepper, and celery; cook and stir until vegetables are softened, about 5 minutes. Add the spicy sausage and cook until lightly browned, about 5 minutes.
- Stir in the smoked paprika, cayenne pepper, and thyme. Pour in the chicken broth and diced tomatoes; bring to a boil. Reduce heat to low and simmer for 10 minutes.
- Mix the flour, salt, black pepper, red pepper, and sugar together in a small bowl. Gradually stir the flour mixture into the Dutch oven. Simmer until the sauce thickens, about 10 minutes.
- Stir in the shrimp and cook until they turn pink, about 5 minutes. Sprinkle with parsley.
- Serve the gumbo with a side of rice.
