Cajun-Style Venison Gumbo Recipe

Ingredients:
- 2 tablespoons of olive oil
- 1 pound of venison, diced
- 1 cup of all-purpose flour
- 1 large onion, diced
- 2 stalks of celery, diced
- 1 bell pepper, diced
- 2 cloves of garlic, minced
- 1 teaspoon of dried thyme
- 1 teaspoon of dried oregano
- 1 teaspoon of paprika
- 1 teaspoon of cayenne pepper
- 2 bay leaves
- 4 cups of chicken broth
- 2 cups of okra, sliced
- 1 cup of diced tomatoes
- 2 tablespoons of Worcestershire sauce
- Salt and pepper to taste
- 3 tablespoons of parsley, finely chopped
Directions:
- Heat the olive oil in a large pot over medium heat.
- Add the venison to the pot and cook until lightly browned, about 5 minutes.
- Add the flour to the pot and stir until it forms a paste. Cook for 2 minutes.
- Add the onion, celery, bell pepper, and garlic to the pot and cook until softened, about 5 minutes.
- Add the thyme, oregano, paprika, cayenne pepper, and bay leaves and stir to combine.
- Pour in the chicken broth and stir to combine. Bring to a boil, then reduce the heat and simmer for 20 minutes.
- Add the okra, tomatoes, Worcestershire sauce, salt, and pepper and stir to combine. Simmer for 10 minutes.
- Remove from the heat and stir in the parsley. Serve hot with cooked rice.
