Cajun-Style Venison Gumbo Recipe

Ingredients:

  • 2 tablespoons of olive oil
  • 1 pound of venison, diced

  • 2 stalks of celery, diced

  • 2 cloves of garlic, minced
  • 1 teaspoon of dried thyme
  • 1 teaspoon of dried oregano
  • 1 teaspoon of paprika
  • 1 teaspoon of cayenne pepper
  • 2 bay leaves
  • 4 cups of chicken broth
  • 2 cups of okra, sliced
  • 1 cup of diced tomatoes
  • 2 tablespoons of Worcestershire sauce
  • Salt and pepper to taste
  • 3 tablespoons of parsley, finely chopped

Directions:

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the venison to the pot and cook until lightly browned, about 5 minutes.
  3. Add the flour to the pot and stir until it forms a paste. Cook for 2 minutes.
  4. Add the onion, celery, bell pepper, and garlic to the pot and cook until softened, about 5 minutes.
  5. Add the thyme, oregano, paprika, cayenne pepper, and bay leaves and stir to combine.
  6. Pour in the chicken broth and stir to combine. Bring to a boil, then reduce the heat and simmer for 20 minutes.
  7. Add the okra, tomatoes, Worcestershire sauce, salt, and pepper and stir to combine. Simmer for 10 minutes.
  8. Remove from the heat and stir in the parsley. Serve hot with cooked rice.
