Chicken breast stuffed with fresh mozzarella, tomatoes, and basil, then baked to ooey-gooey perfection.
Ingredients:
- 4 boneless, skinless chicken breasts
- 4 slices fresh mozzarella cheese
- 2 large tomatoes, sliced
- Fresh basil leaves
- Salt and black pepper, to taste
- 2 tablespoons olive oil
- Balsamic glaze, for drizzling
- Fresh basil, for garnish (optional)
Instructions:
- Preheat the oven to 375°F (190°C) and line a baking dish with parchment paper.
- Butterfly the chicken breasts by slicing horizontally through the center, without cutting all the way through. Open the chicken breasts like a book.
- Place a slice of mozzarella cheese, tomato slices, and fresh basil leaves inside each chicken breast. Season with salt and black pepper.
- Fold the chicken breast over the filling and secure with toothpicks, if needed.
- Heat the olive oil in a large skillet over medium-high heat. Sear the stuffed chicken breasts for about 2-3 minutes per side until golden brown.
- Transfer the seared chicken breasts to the prepared baking dish and bake for 20-25 minutes, or until the chicken is cooked through and the cheese is melted.
- Remove from the oven and let the chicken rest for a few minutes. Drizzle with balsamic glaze and garnish with fresh basil, if desired. Serve hot and enjoy!
