Caramelized Onion and Gruyère Pot Roast with French Onions

This delicious pot roast dinner is easy and flavorful. It combines caramelized onion, Gruyère cheese, and French onions to make a savory, comforting meal that your family will love.

Ingredients:

  • 2 tablespoons olive oil
  • 2 large onions, sliced into thin rings
  • 2 cloves of garlic, minced
  • 2 pounds of beef chuck roast
  • 1 teaspoon of dried oregano
  • 1 teaspoon of dried thyme
  • 1 teaspoon of salt
  • 1 teaspoon of pepper
  • 1/2 cup of beef broth or stock
  • 1/4 cup of Gruyère cheese, shredded
  • 2 tablespoons of butter
  • 1/2 cup of French-fried onions

Directions:

  1. Heat the olive oil in a large pot over medium heat. Add the onions and cook for 10-15 minutes, stirring occasionally, until softened and caramelized.
  2. Add the garlic and cook for an additional minute.
  3. Add the beef chuck roast to the pot and season with oregano, thyme, salt and pepper. Cook for 5 minutes, turning to brown all sides.
  4. Pour in the beef broth and bring to a boil. Reduce to a simmer, cover and cook for 2-3 hours, or until the roast is tender and cooked through.
  5. Preheat the oven to 350°F. Place the roast onto a baking sheet and top with the Gruyère cheese. Bake for 10 minutes, or until the cheese is melted and bubbly.
  6. Heat the butter in a small saucepan over medium heat. Add the French-fried onions and cook for 2-3 minutes, until lightly browned and crispy.
  7. Serve the roast with the caramelized onions, French-fried onions, and any of the cooking liquid from the pot.
