Caramelized Onion and Gruyère Pot Roast with French Onions
This delicious pot roast dinner is easy and flavorful. It combines caramelized onion, Gruyère cheese, and French onions to make a savory, comforting meal that your family will love.
Ingredients:
- 2 tablespoons olive oil
- 2 large onions, sliced into thin rings
- 2 cloves of garlic, minced
- 2 pounds of beef chuck roast
- 1 teaspoon of dried oregano
- 1 teaspoon of dried thyme
- 1 teaspoon of salt
- 1 teaspoon of pepper
- 1/2 cup of beef broth or stock
- 1/4 cup of Gruyère cheese, shredded
- 2 tablespoons of butter
- 1/2 cup of French-fried onions
Directions:
- Heat the olive oil in a large pot over medium heat. Add the onions and cook for 10-15 minutes, stirring occasionally, until softened and caramelized.
- Add the garlic and cook for an additional minute.
- Add the beef chuck roast to the pot and season with oregano, thyme, salt and pepper. Cook for 5 minutes, turning to brown all sides.
- Pour in the beef broth and bring to a boil. Reduce to a simmer, cover and cook for 2-3 hours, or until the roast is tender and cooked through.
- Preheat the oven to 350°F. Place the roast onto a baking sheet and top with the Gruyère cheese. Bake for 10 minutes, or until the cheese is melted and bubbly.
- Heat the butter in a small saucepan over medium heat. Add the French-fried onions and cook for 2-3 minutes, until lightly browned and crispy.
- Serve the roast with the caramelized onions, French-fried onions, and any of the cooking liquid from the pot.
