Caramelized Onion Beef Stroganoff

This classic comfort food dish is made with tender beef, caramelized onions, and a creamy sauce. It’s easy to make in one pot and sure to be a hit with the whole family.

Ingredients:

  • 1 pound of beef stew meat
  • 2 tablespoons of olive oil
  • 2 large onions, thinly sliced
  • 3 cloves of garlic, minced
  • 1/2 teaspoon of thyme
  • 1/2 teaspoon of paprika
  • 1 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • 1 tablespoon of tomato paste
  • 1 cup of beef broth
  • 1/4 cup of sour cream
  • 1/4 cup of chopped parsley

Directions:

  1. Heat the olive oil in a large skillet over medium-high heat. Add the beef and cook until it is no longer pink, about 5 minutes.
  2. Add the onions to the skillet and cook until they are golden brown, about 10 minutes, stirring occasionally.
  3. Add the garlic, thyme, paprika, salt, and pepper to the skillet and cook until fragrant, about 1 minute.
  4. Stir in the tomato paste and beef broth and bring to a simmer. Reduce the heat to medium-low and cook for 10 minutes, stirring occasionally.
  5. Stir in the sour cream and cook until heated through, about 2 minutes.
  6. Garnish with chopped parsley and serve.
