Caramelized Onion Beef Stroganoff
This classic comfort food dish is made with tender beef, caramelized onions, and a creamy sauce. It’s easy to make in one pot and sure to be a hit with the whole family.
Ingredients:
- 1 pound of beef stew meat
- 2 tablespoons of olive oil
- 2 large onions, thinly sliced
- 3 cloves of garlic, minced
- 1/2 teaspoon of thyme
- 1/2 teaspoon of paprika
- 1 teaspoon of salt
- 1/4 teaspoon of black pepper
- 1 tablespoon of tomato paste
- 1 cup of beef broth
- 1/4 cup of sour cream
- 1/4 cup of chopped parsley
Directions:
- Heat the olive oil in a large skillet over medium-high heat. Add the beef and cook until it is no longer pink, about 5 minutes.
- Add the onions to the skillet and cook until they are golden brown, about 10 minutes, stirring occasionally.
- Add the garlic, thyme, paprika, salt, and pepper to the skillet and cook until fragrant, about 1 minute.
- Stir in the tomato paste and beef broth and bring to a simmer. Reduce the heat to medium-low and cook for 10 minutes, stirring occasionally.
- Stir in the sour cream and cook until heated through, about 2 minutes.
- Garnish with chopped parsley and serve.
