Ingredients:
• 2 cups all-purpose flour
• ½ teaspoon baking soda
• ½ teaspoon baking powder
• ¼ teaspoon salt
• ¾ cup butter, softened
• 1 cup sugar
• 2 eggs
• ½ cup buttermilk
• 1 teaspoon almond extract
• 1 cup fresh or frozen cherries, chopped
• 1 cup sliced almonds
For the Frosting:
• 8 ounces cream cheese, softened
• 4 tablespoons butter, softened
• 2 teaspoons almond extract
• 2 cups powdered sugar
Directions:
1. Preheat oven to 350°F and line 12 muffin cups with paper liners.
2. In a medium bowl, whisk together the flour, baking soda, baking powder, and salt.
3. In a large bowl, beat together the butter and sugar until light and fluffy.
4. Beat in the eggs, one at a time, and then add the buttermilk and almond extract.
5. Slowly add the dry ingredients and mix until combined.
6. Fold in the cherries and almonds.
7. Divide the batter between the muffin cups and bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
8. Let the cupcakes cool before frosting.
9. Beat together the cream cheese, butter, and almond extract in a medium bowl.
10. Slowly add the powdered sugar and mix until creamy.
