Cheesy Ground Beef Taco Macaroni with Jalapeños Recipe

This delicious dish is the perfect combination of Mexican flavor and comfort food. Made with ground beef, macaroni, jalapeños, and plenty of cheese, this dish is sure to please any crowd. Ingredients:

  • 1 pound lean ground beef
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 (15-ounce) can diced tomatoes, drained
  • 1 (4-ounce) can diced jalapeños, drained
  • 1 (1.25-ounce) package taco seasoning mix
  • 3 cups uncooked elbow macaroni
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/4 cup chopped fresh cilantro

Directions:

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a large skillet over medium heat, cook ground beef until browned; drain fat. Stir in black beans, tomatoes, jalapeños, and taco seasoning mix; cook for 5 minutes.
  3. In a large pot over medium-high heat, bring 4 quarts of lightly salted water to a boil. Add macaroni and cook 8 minutes, stirring occasionally. Drain.
  4. In a large bowl, combine the cooked macaroni, beef mixture, cheddar cheese, Monterey Jack cheese, and cilantro. Transfer to a 9×13 inch baking dish.
  5. Bake in preheated oven for 20 minutes, or until cheese is melted and bubbly.
  6. Remove from oven and let cool for 5 minutes before serving.
  7. Garnish with additional cilantro, if desired.
