Chicken in Red Wine

Ingredients:

  • 4 chicken breasts
  • 1/4 cup all-purpose flour
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 cup red wine
  • 1/2 cup chicken broth
  • 1 tablespoon tomato paste
  • 2 teaspoons fresh thyme leaves
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste
  • 2 tablespoons butter
  • 2 tablespoons chopped parsley, for garnish

Directions:

  1. Season the chicken breasts with salt and pepper and lightly dust with all-purpose flour.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook until golden brown on both sides, about 5 minutes per side.
  3. Remove the chicken from the skillet and set aside. Add the diced onion and garlic to the skillet and cook until softened, about 5 minutes.
  4. Add the red wine, chicken broth, tomato paste, thyme, and oregano to the skillet and stir to combine. Return the chicken to the skillet and bring the mixture to a boil.
  5. Reduce the heat to low and simmer for 15-20 minutes, or until the sauce has thickened and the chicken is cooked through.
  6. Stir in the butter until melted and season with salt and pepper to taste.
  7. Serve over mashed potatoes and garnish with chopped parsley, if desired.
