Chipotle-Flavored Spicy Macaroni and Cheese

Ingredients:

  • 2 cups uncooked macaroni noodles
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups of milk
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup diced chipotle peppers in adobo sauce
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon smoked paprika
  • Salt and pepper to taste

Directions:

  1. Bring a large pot of salted water to a boil. Cook the macaroni noodles according to package instructions until al dente. Drain and set aside.
  2. In a large saucepan, melt the butter over medium heat. Add in the flour and whisk until combined. Slowly add in the milk while whisking, stirring until smooth. Cook for 4-5 minutes, stirring occasionally, until the sauce is thickened.
  3. Add in the cheese and stir until melted. Add in the chipotle peppers, garlic powder, onion powder, and smoked paprika. Stir until combined.
  4. Add the cooked macaroni noodles to the saucepan and stir to combine. Season with salt and pepper to taste.
  5. Transfer the macaroni and cheese to a 9×13 inch baking dish. Cover with aluminum foil.
  6. Bake in a preheated 375 degree oven for 20-25 minutes until bubbly and hot. Remove the foil and cook for an additional 5 minutes.
  7. Serve hot and enjoy!
