Chipotle-Flavored Spicy Macaroni and Cheese

Ingredients:
- 2 cups uncooked macaroni noodles
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 2 cups of milk
- 1 cup shredded sharp cheddar cheese
- 1/2 cup shredded mozzarella cheese
- 1/4 cup diced chipotle peppers in adobo sauce
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon smoked paprika
- Salt and pepper to taste
Directions:
- Bring a large pot of salted water to a boil. Cook the macaroni noodles according to package instructions until al dente. Drain and set aside.
- In a large saucepan, melt the butter over medium heat. Add in the flour and whisk until combined. Slowly add in the milk while whisking, stirring until smooth. Cook for 4-5 minutes, stirring occasionally, until the sauce is thickened.
- Add in the cheese and stir until melted. Add in the chipotle peppers, garlic powder, onion powder, and smoked paprika. Stir until combined.
- Add the cooked macaroni noodles to the saucepan and stir to combine. Season with salt and pepper to taste.
- Transfer the macaroni and cheese to a 9×13 inch baking dish. Cover with aluminum foil.
- Bake in a preheated 375 degree oven for 20-25 minutes until bubbly and hot. Remove the foil and cook for an additional 5 minutes.
- Serve hot and enjoy!
