Ingredients:

  • 2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 3 eggs
  • 1/2 cup vegetable oil
  • 1/2 cup unsweetened applesauce
  • 1 1/2 cups white sugar
  • 2 teaspoons vanilla extract
  • 2 cups grated zucchini
  • 1 cup semisweet chocolate chips

Instructions:

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease and flour two 8×4 inch loaf pans.
  2. In a medium bowl, whisk together the flour, cocoa powder, baking soda, baking powder, salt, and cinnamon.
  3. In a large bowl, beat the eggs, oil, applesauce, sugar, and vanilla together until well combined.
  4. Stir in the grated zucchini.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Fold in the chocolate chips.
  7. Divide the batter evenly between the prepared loaf pans.
  8. Bake for 50-60 minutes, or until a toothpick inserted into the center of the bread comes out clean.
  9. Cool the bread in the pans for 10 minutes, then remove from the pans and cool completely on a wire rack.
