Ingredients:

  • 1 1/4 cups all-purpose flour
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons pure vanilla extract
  • 1/2 cup cocoa powder
  • 1/2 cup buttermilk
  • 1/2 cup creamy peanut butter
  • 1/2 cup confectioners’ sugar
  • 2 tablespoons heavy cream

Directions:

  1. Preheat oven to 350°F. Grease a 12-cup muffin tin with cooking spray or line with cupcake liners.
  2. In a medium bowl, combine the flour, baking powder, baking soda, and salt and set aside.
  3. Using an electric mixer, beat the butter and sugar together until light and fluffy. Add the eggs one at a time, beating well after each addition. Beat in the vanilla.
  4. Add the cocoa powder and mix until just combined. With the mixer on low, slowly add the buttermilk, then the dry ingredients, mixing until just incorporated.
  5. Fill the cupcake liners three-quarters full with the batter. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  6. Let cupcakes cool completely before frosting.
  7. In a medium bowl, mix together the peanut butter, confectioners’ sugar, and heavy cream until a thick frosting forms. Spread or pipe the frosting onto the cooled cupcakes.
  8. Serve and enjoy!
