Chocolate Peanut Butter Eclairs Recipe
This delicious treat combines two classic flavors – chocolate and peanut butter – to make a delectable dessert. Our Chocolate Peanut Butter Eclairs are made with a light and fluffy pastry dough, filled with a creamy peanut butter-flavored custard, and dipped in a thick layer of chocolate ganache. Ingredients:
- 3/4 cup all-purpose flour
- 1/4 teaspoon salt
- 6 tablespoons butter
- 1/2 cup water
- 2 eggs
- 3/4 cup heavy cream
- 1/4 cup peanut butter
- 1/2 cup sugar
- 1/2 teaspoon vanilla extract
- 1/2 cup semi-sweet chocolate chips
- 1 teaspoon butter
Directions:
- Preheat the oven to 375 degrees F. Line a baking sheet with parchment paper and set aside.
- In a medium bowl, whisk together the flour and salt. Set aside.
- In a medium saucepan, combine the butter and water. Heat over medium-high heat until the butter is melted and the mixture is boiling. Add the flour mixture and stir constantly until the mixture forms a ball. Remove from heat and let cool for 10 minutes.
- Beat in the eggs one at a time, stirring until the mixture is smooth. Scoop the dough into a pastry bag fitted with a large star tip. Pipe 12 eclairs onto the prepared baking sheet.
- Bake for 20 minutes, or until the eclairs are golden brown. Remove from oven and let cool.
- In a medium bowl, whisk together the cream, peanut butter, sugar, and vanilla. Transfer the mixture to a pastry bag fitted with a small plain tip. Pipe the filling into the cooled eclair shells.
- In a small saucepan, melt the chocolate chips with the butter. Dip each filled eclair into the chocolate to coat. Place the eclairs on a baking sheet lined with parchment paper and let cool until the chocolate is set. Enjoy!
