Chocolate Peanut Butter Eclairs Recipe

This delicious treat combines two classic flavors – chocolate and peanut butter – to make a delectable dessert. Ingredients:

  • 3/4 cup all-purpose flour
  • 1/4 teaspoon salt
  • 6 tablespoons butter
  • 1/2 cup water
  • 2 eggs
  • 3/4 cup heavy cream
  • 1/4 cup peanut butter
  • 1/2 cup sugar
  • 1/2 teaspoon vanilla extract
  • 1/2 cup semi-sweet chocolate chips
  • 1 teaspoon butter

Directions:

  1. Preheat the oven to 375 degrees F. Line a baking sheet with parchment paper and set aside.
  2. In a medium bowl, whisk together the flour and salt. Set aside.
  3. In a medium saucepan, combine the butter and water. Heat over medium-high heat until the butter is melted and the mixture is boiling. Add the flour mixture and stir constantly until the mixture forms a ball. Remove from heat and let cool for 10 minutes.
  4. Beat in the eggs one at a time, stirring until the mixture is smooth. Scoop the dough into a pastry bag fitted with a large star tip. Pipe 12 eclairs onto the prepared baking sheet.
  5. Bake for 20 minutes, or until the eclairs are golden brown. Remove from oven and let cool.
  6. In a medium bowl, whisk together the cream, peanut butter, sugar, and vanilla. Transfer the mixture to a pastry bag fitted with a small plain tip. Pipe the filling into the cooled eclair shells.
  7. In a small saucepan, melt the chocolate chips with the butter. Dip each filled eclair into the chocolate to coat. Place the eclairs on a baking sheet lined with parchment paper and let cool until the chocolate is set. Enjoy!
