Ingredients:
- 2 tablespoons olive oil
- 3-4 pound beef chuck roast
- 1 tablespoon salt
- 1 teaspoon freshly ground black pepper
- 1 large onion, chopped
- 4 cloves garlic, minced
- 2 tablespoons tomato paste
- 2 cups apple cider
- 2 tablespoons honey
- 1 teaspoon ground cinnamon
- 1 teaspoon ground cloves
- 3 sprigs fresh thyme
- 2 bay leaves
Directions:
- Preheat oven to 350°F. Heat the oil in a large oven-safe pot over medium-high heat. Season the chuck roast with salt and pepper.
- Add the roast to the pot and brown on all sides, about 5 minutes per side. Remove the roast from the pot and set aside.
- Add the onion to the pot and cook until softened, about 5 minutes. Add the garlic and tomato paste and cook for another 2 minutes.
- Add the apple cider, honey, cinnamon, cloves, thyme, and bay leaves to the pot and stir until combined. Add the roast back to the pot.
- Bring to a boil, then reduce heat to low and cover with a lid. Simmer for 1 hour.
- Transfer the pot to the preheated oven and cook for another 2 hours, until the roast is fork-tender.
