Cook rice, scramble eggs in a separate pan and set aside. Heat up some oil in a wok, add chopped garlic, chopped onions, and any vegetables of your choice. Once vegetables are cooked, add the cooked rice, scrambled eggs, and soy sauce to taste. Stir-fry until well combined.

Ingredients:

  • 2 cups cooked rice
  • 2 eggs
  • 2 tablespoons oil
  • 2 cloves garlic, minced
  • 1 small onion, chopped
  • 1 cup mixed vegetables (carrots, peas, corn, etc.)
  • 2 tablespoons soy sauce

Instructions:

  1. Cook the rice according to package instructions and set aside.
  2. In a separate pan, scramble the eggs until fully cooked. Set aside.
  3. Heat up the oil in a wok over high heat.
  4. Add the minced garlic and chopped onion to the wok and stir-fry for about 1 minute or until fragrant.
  5. Add the mixed vegetables and continue to stir-fry for another 2-3 minutes or until the vegetables are cooked to your liking.
  6. Add the cooked rice to the wok and stir-fry for 2-3 minutes or until heated through.
  7. Add the scrambled eggs and soy sauce to the wok and stir-fry for an additional minute or until well combined.
  8. Serve hot and enjoy!
