Coconut Banana Bread with Coconut Streusel Topping

Ingredients:
- 3 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 teaspoon salt
- 1 teaspoon ground cinnamon
- 3/4 cup butter, softened
- 1 cup granulated sugar
- 1/2 cup light brown sugar
- 2 large eggs
- 3 ripe bananas, mashed
- 1/2 cup coconut flakes
- 1 cup plain Greek yogurt
- 1 teaspoon pure vanilla extract
- For the streusel topping:
- 1/4 cup all-purpose flour
- 1/4 cup packed light brown sugar
- 2 tablespoons butter, melted
- 1/4 cup coconut flakes
Directions:
- Preheat oven to 350 degrees F. Grease and flour a 9×5 inch loaf pan.
- In a medium bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon. Set aside.
- In a large bowl, cream together the butter and sugars until light and fluffy, about 3 minutes. Beat in the eggs, one at a time. Add the mashed bananas, coconut flakes, yogurt, and vanilla extract, and mix until combined.
- Add the dry ingredients to the wet ingredients and mix until just combined. Do not overmix.
